Based on this: Looks like they won't be reusing any of the unique companion subclasses, which in my book is a huge plus. I'm very curious about them. I don't think there can be any DPS-oriented Fighter or Monk subclass that trumps the Devoted/Helwalker combo for me, but still—you never know, and I'm very curious nonetheless. Now we really need to know whether we can mix the Challenges with mods and Blessings

Not necessarily. They’d have to write a lot more reactivity for some of those compared to completely new ones. Imagine being a Watershaper or Stormspeaker with no reactivity from the Huana, Tekehu, or the Guild. Or being a Sister of the Reaping Moon with no reactivity from Xoti and the Dawnstars. Not to mention how lore-inappropriate it would be for the Watcher to belong to one of those subclasses.

MIG is progressively less important the more damage bonuses you stack. DEX is king because, as mentioned already in the backer beta days, unlike in the first game in Deadfire there is no limit to how many speed bonuses you can benefit from. The inability to ever reach 0 recovery means stacking speed never ceases to pay dividends.

The downside is the portraits will take even longer to draw, and we'll get even less official ones as a result (and PoE/PoE 2 are already pretty starved.) Then we'll turn to a professional artist for a custom portrait of our character which will cost us a lot more because it's full body instead of just the face.

This has actually been an issue since the backer beta: Whenever you fight unarmed, regardless of your character's class or whether they have the Monastic Unarmed Training talent, it is impossible to right-click the fist weapon icon to retrieve details like you can with other weapons. This is a bummer for you can't see your attack speed (the tooltip brought up you when right-click a weapon is the only place where to do that) and because you can't do comparisons with other weapons by having both tooltips open at the same time. It would be really cool to have this feature. Another, tangentially related issue is that there seems to be an icon within the game's files that was specifically designed for Monks' unarmed attacks. However, the icon is currently unused. It would be a nice touch to use it for Monks and, why not, for characters who take the Monastic Unarmed Training talent.
