Knockdown has a small advantage over stun: It moves the enemy. Standing still while punching one guy while 5 others are wailing at you isn't the best strategy in games like DS3. With knockdown, you can stay on the move, even if just a little bit. Plus you have a visual cue when the enemy recovers, better than counting the seconds IMO.
