I was idly wondering about that too, because those damn kids is one of (many, many...) reasons I am annoyed with JRPGS.  Methinks it's because high schoolers is the major target group in Japan and gaming industry is simply catering to them?

The MegaTen games have had adult protaganists (Persona 2: Eternal Punishment's protagonist is an adult reporter for a teen magazine, Strange Journey's protag is a military man) but most tend to be high schoolers.  I've heard that Japan sees high school as a time for learning and experimentation and that's why so many protaganists in stories (video game or not) are in high school; those with adult characters have the adults as people whose jobs give them the freedom to investigate and explore (reporter, military, royalty, martial artist traveling the world to train, mercenary).

I cannot - yet I must. How do you calculate that? At what point on the graph do "must" and "cannot" meet? Yet I must - but I cannot! ~ Ro-Man

But why dont they have adults as characters or at least a combination?

As I mentioned I know its not some kind of weird reason and its very normal but why use children ?

Because these are made by Japanese nerds for other Japanese nerds, who have no social relationships, and the only reference point for social intercourse is school. Not that they had social relationships there either, but they saw others having them.

For a less cynical answer, it's just part of the culture for anime/manga/games. I'm sure some researcher or journalist could delve deeper for some sociopsychological reason (and maybe has), but on the face of it, it's just what they do.

We could ask @HoonDing but I am worried he will give us a creepy and weird answer :p

In an ideal world, one where companies honor their promised delivery date, I would be playing this right now.

They use teenagers. The reason is, that the main demographics, which is purchasing the games in Japan are teenagers. And for that reason a lot of companies think, that old people are not as popular among these demographics. You can read little bit more about Nier release on PS3, by Square Enix, which they released two editions in Japan, because they were afraid that no one would buy the game where a main protagonist is as old fart as you and me ;)

I'm led to believe that once someone from Japan enters adulthood, they enter an office building wherein they will live out the remainder of their lives.

there are actually seems to be a small boom of manga and light novel with adult working setting in the past few years

but vastly outnumbered by the reincarnate in another world trash that still overrun the market
