Carth was already a respected member of the Republic military. This means he probably recognized most of the important enemy capital ships and probably some of their commanders as well. It's not too long a shot to assume that the Ebon Hawk had sensors. The Leviathan's signature probably was enough to tell it from other ships of the same design, and that would be enough for Carth to recognize it. If you have played any of the X-Wing games you know what I'm talking about.
