To answer your Q:  You could stick to resting in the nighttime if you wanted to - and only explore in the day (unless there's a quest that requires night or an auto fast-forward to night for a scene).

But why would you? (Unless you're role-playing a character who's afraid of the dark)

ok thanks, so my question is, can you just rest during the night and only explore during the day? why would you want to do anything when its night?

There may be quests that require going places at certain times of the day as well, never know.  Better question, why would you be opposed to going somewhere at night?

if its darker its harder to see items on the ground, monsters, etc

They should let avaiable only the easiest of difficulty settings: if its harder, it will be harder to play

also don't forget it takes several hours to traverse regions, so it may be night time whether you want it to be or not. But Josh said there are couple of times where there is night time content, but generally there's not anything different.

Should we not start with some Ipelagos, or at least some Greater Ipelagos, before tackling a named Arch Ipelago? 6_u

Apart from what others have answered, this is also because of IE games that had the same approach.

so are there any differences between day and night other than the graphics being darker

do npcs sleep at night in their beds while in the morning they walk around town?

 

No, there aren't Npc schedules. 

Still better the only aesthetic cycle (so important for the atmosphere, expecially in Rpgs) than nothing, like Original Sin or Dragon Age: Inquisition did.
