If the game is designed specifically for multiple cores, running it on a single core processor would make a big impact on the performance. I imagine that the single core will probably have multple threads going, but since it's a single core, it's still only executing one at a time. When I heard about those I decided to wait for them. There is a column in this month's PC Format by the dude who runs Voodoo saying that AMD's four cores on a chip would be useful for instancing; in other words one could load four instances of, say, WoW and have the characters interact between each other. Also, there was a rumour in this month's Custom PC that AMD's 90nm dies might not be as far away as we have been led to believe. Replace "90nm" with "65nm". The R600 (ATi DX10-generation GPU) is delayed until 2007, and ATi are working on combining the Northbridge and Southbridge on one chip on mobos.
