traders' respec doesn't let you choose their initial skills, only the ones you get from regular level-ups.

you should be able to change phrases

Not the level-1 stuff. It's fixed for the companions. Kana gets skeleton summons, Edér gets Knockdown and so on. You cannot chance that with normal retraining.
