I was wondering how to advance in a relationship with Maia in Pillars of Eternity 2 Deadfire because I can’t seem to get past the secound interaction.

AFAIK there are few things you have to do:

• Get her disposition to +2
• Feed the bird
• Take her to Hasongo

I think it's a pretty weird one? I've initiated the romance, fed the bird and completed hasongo + Maias quest. When I speak with her I have the option of "ending" our relationship. But I have noticed no particular romantic relationship, it's.. just not there. Nothing's happended since those early flirts. I'm about halfway through the game. Is my relationship with Maia bugged? Or is it that any romantic relationship with Maia only has a beginning and an end? No "middle" in sight..

Yeah, there aren't a lot of new events until the endgame. 

It might change some of her dialogue if you select or click on her, or initiate a conversation. but there's nothing interactive. 

 

Tis a shame.

Well considering how underwhelming they (or at least this one is) are in this game, I understand you entirely.

My current character is not interested in romance at all. Unless you consider those crew members knocking on the door as such.

I'm not sure how they activate, but they stopped after I denied one "guest". A pity, since my future Watchers will be interested in companions and they'll probably refuse even the first crew member.
