My first play through I want to use all the story characters and stick to only single classes... If my Watcher is a Chanter/Skald what should the rest of my party look like?

Hmmm - Chanter, Eder Rogue (unless you have mechanics of at least 2 or high enough, then choose fighter), Xoti monk, Aloth wizard and last spot reserve for either Maia ranger or Pellegina paladin.

I've been heavily reliant on Xoti as a priest so far especially in tougher fights due to her healing.  Will I be alright without it?   Right now I am running Eder Fighter, Xoti Priest, Watcher Chanter/Skald, Serafen Cipher, Aloth Wizard.   I feel like Serafen is my weak link right now.

Xoti+Eder+Aloth+Watcher is good start.

Add one autoatacker, like Serafen Barb or Maia, or Pallagina

 

You could recruit Ydwin Rogue, she does not talk much, but maybe that is for the best.

Pick Xoti or Tekehu as your healer, Eder and/or Pellegina as frontline, then choose your favorite out of Serafen, Aloth, and Maia as damage.
