Spicey Blue Cheese Burger

 

2 lbs. Ground Beef

1/4 cup chopped onion

3 Tbsp Tabasco or equivilent

2 Tbsp Honey

1 Tbsp garilc salt

1 tsp crushed red pepper

1 tsp back pepper

..........

6 ounces Blue Cheese, cut into 6 pieces (burgers are good without the cheese too!)

6 buns, toasted

6 portabella mushrooms slices, grilled

6 slices tomatoes, lightly grilled

 

Pre-heat grill to medium-high heat. Combine first 7 ingredients in a bowl, mix well. Make six patties out of that, if using cheese, form patties around chunks of blue cheese. Grill 8-10 minutes. Place tomatoes and mushrooms on top. Serve with toasted bun

Peri Peri Chicken

 

 

 

INGREDIENTS:

 

* 1/4 cup paprika

* 2 tablespoons hot chili powder

* 1 cup fresh lemon juice

* 3 cloves garlic, minced

* 1 1/2 teaspoons chopped fresh ginger

* 1 1/2 teaspoons salt

* 4 bone-in chicken breast halves

 

DIRECTIONS:

 

1. In a large bowl, stir together the paprika, chili powder, lemon juice, garlic, ginger and salt. Rub chicken with the mixture, place in a dish, and marinate for 3 hours.

2. Preheat a grill for medium heat.

3. Place chicken onto the grill and discard the marinade. Cook for about 30 minutes, turning occasionally, until the skin is slightly charred and juices run clear.

Chicken-thigh Chili

 

(very approximate measurements)

 

Start with about a pound and a half of boneless, skinless chicken thighs. Saute them in some light oil until they're cooked through. Break them apart a bit with a wooden spoon. Put aside.

 

Chop up about 2 cups each of onion and green bell pepper. Also chop up a cup of celery, a couple of jalapenos (remove seeds for milder chili, keep em for hot), and a few cloves of garlic. Get out your big ol' chili pot, and get it hot over medium to med-hi heat. Put a little olive oil in the bottom, and toss in the veggies and chicken. Add some salt and pepper. Stir occasionally to break the chicken apart.

 

Once the veggies are cooked (when the onions are translucent), add your wet ingredients and seasonings. I go with 3-4 16 oz. cans (drained and rinsed) of kidney beans (and maybe a can of garbazos too, for variety), about 3 cans of diced or whole (break apart with wooden spoon) tomatoes, and 1 8 oz. can of tomato paste. For spices, start with 2-3 tbs. of chili powder, and throw in another couple of teaspoons of salt. Everything else is optional. Add some cumin, oregano, hot sauce, extra chili powder, or anything else you think would go well. Stir, reduce heat, and let simmer until it achieves the consistency you want (can take an hour or two).

 

You can do this with ground meat (brown it in chili pot, drain, then add veggies; all the rest is the same), but that would be boring.

Pizza:

 

Got to nearest Morrisons.

 

Buy a pre-made pizza for 79 pennies.

 

Add tuna and sweetcorn (and chillies if you like).

 

Stick in oven.

 

Remove from oven when cooked.

 

 

(Seriously this is a pretty good recipe. The pizza's from morrisons are very cheap, yet combined with some of your own toppings, they are pretty delicious)
