Is there a way to make most of the people you travel with a jedi, and if so, who can be turned and is it hard?

Not really all that hard. Off hand I know that

can all be turned into Jedi. I think that's it though.

Just speak with your crew-members, and sometimes you'll be enabled to teach them things bit by bit. Handmaiden is easy, though you have to beat her fighting. Atton is a bit tougher because you have to do a small side-quest first :)

 

The other I've never tried because I've never really used them in my party.

Disciple can become a Jedi as well.

I like Disciple. And I'm a boy. But I also liked Prince Charming from Shrek 2, and they look exactly alike. No, I'm not gay. But nothing is wrong with being gay.
