Maybe I'm missing something, but there is a way to manage saved games? I'd like to delete saves or even entire character profiles since I went overboard at the start with different experiments. I didn't find a way to manage saves and if I try to delete them manually they get synced back...

Make sure Steam Cloud saves are disabled for this game, you can right click Pillars and go to Properties and go to Updates. You should be able to then delete your files without them getting resyned.
