IS that castle the only stronghold? I was playing a paladin... is that why I got given a castle? Would I have had a different stronghold as a priest or thief?

The stronghold is the same for every classes.

The stronghold is the same for every class. However, there are buildings within it that grant rest bonuses advantageous to your class (i.e. +3 int), as well as other beneficial effects.
