I agree. I'm playing on Hard and it helped me dispose groups of enemies by consuming food and potions before fights.

But be careful, the consumables don't stack (or at least not all) and you should know what consumable to use against what problem.

But yes, use them, theres no point in hoarding them(except you want to sell all the stuff).
