I currently doesn't has time to check my assumption (maybe on weekends), but if now main (not assets)  PoE II data stored as JSON files, then you can just put all files under local  GIT repository and track changes by committing each steam/gog patch :D Then you can easy connect patch notes with file changes and revert some changes in future
