When you create your main char, would it be possible to select the classes of companions ( or create a completely new subclass ) ?

 

I found Takehu and I like his druid class ( have not used him as chanter ). The spells and no friendly fire for ice spells is nice.

I like to have a watershaper/wizard who freezes everything around him.

Yes. Use Unityconsole mod from nexus, install it, launch game, go to watcher's character sheet, use the mod's GUI to change his class(es).
