I am dealing with the same thing right now, did you ever find a solution?

First time playing Pillars 2 get to where Aloth is went and accepted him into party but the menu never came up to select his class. I did not think at the moment about it and kept playing, now I'm at the point where I can leave the starting island but still cannot recruit him.
