I think high defenses shouldn't be ruled out. Pets can't use items or increase engagement limit. Actually, I'd say give tanking pets significantly larger health pools than party members but uneven defenses, none quite as good as party members and some fairly awful, depending on species. This makes it a short-term OT that healing is less effective for, and more situational than a party member.
