Can I not edit the books like in the first game? I really liked having a custom one, learning the spells and placing them in one book. I have ninagauth's book which I like for the shadow flame, do I just use quick slot books for other unique spells?

They changed how they work. Now Books actually matter.

Each book has a list of spells you can use by using the book, and many of these spells are only found within grimoires and you can't learn by leveling.

So yes, if you find unique spells you like, you will have to quick switch books.
