I just finished the game, and since my love for it is so brutally intense I want to play through it again, but with another class. But here my problem comes into play; if I start a "New Game", will my first one go away forever? Or can I play through the game as a new class, and still do sidequests with my lvl 15?

IIRC only checkpoint saves will be overwritten. It doesn't overwrite manual saves, so as long as you don't save over your previous file, you can start new characters.
