I debated between recruit and soldier, but in the end picked recruit due to the optional (at least it looks like) NG+ with Veteran.

 

Will the game be significantly more difficult like this? Just wondering, and thanks.

It's not a huge difference. You'll miss out on some skill points (will mostly be felt during the start of the game) but if you pick Recruit options in the dialogues, you can get some bonus skill points from that so.
