What exactly is the role of a game producer? As opposed to a designer.

Probably the main gopher who makes things happen and gets things that are needed for the project.

Setting aside finances and PR then, what does this 'creation' part actually entail? Is the producer actually involved in making the actual game?

I'd say no.

 

He's the one that gets the team what they need and whatnot to work on the project, and does pretty much everything to help make the game, aside from actually working on the game.

Our ideal candidate has been the lead producer for an entire production cycle for at least one AAA game and is familiar with all aspects of the game creation.

Requirements:

 

Five or more years experience, including at least one shipped, internally developed, AAA title, as the "Senior" Producer on the title.

Thorough experience in managing (20-60) person development teams from concept and pitch to post-release support.
