Well, I like them all.

But it also depends on which genre of gaming you like.

I prefer a mix between RPG and FPS (deus ex, omikron, system shock, ...),

so I have to say that Jedi Outcast and Jedi Academy are my favorites.

Then Kotor.

 

I mostly prefer Jedi Knight saga because there you can be a Jedi and do lightsaber duals.

But in KOTOR you have your freedom, better story and more realistic duals.
