I've tried to change specific settings in the config file (why this isn't available in-game is beyond me), and the settings are constantly being overwritten. Is there a way to change individual graphics settings for things like anti-aliasing and have them stick?

It's been quite a few days since I posted this and it's still waiting for approval by a moderator. I'd like to be able to get some input on this issue.

Thanks for letting us know about this! I've brought it up to the dev team to add additional graphic options to the game. 

That would be amazing, thank you! I usually turn off anti-aliasing in all my games because I prefer the extra frames and don't mind some jags (and textures tend to look better too). Tweaking some other options to possibly make it so I can up my postprocessing quality would be nice too.
