Not sure what did it, but I was playing Online with my wife (we're both on PC) and I was the host.

At some point, my bow stopped pitching to match the viewpoint; if I aimed at the ground, the bow would be aimed at the horizon. 

I wish I could be more help.

you broke something :)  i had no issues with the bow and aiming at lunch.  What happens if you load a previous save?

The bow fixes itself between loads, it's just annoying when it randomly bugs.

i've seen on multiplayer that when you aim the bow it looks like the arrow in the bow is stuck in the shaft of another arrow.  doesn't happen on single player.

Seems to happen to both host and client too.
