On my 3x 1680x1050 display the game looks awfully "zoomed in" like this:
Th PDA and all menus are also cut off:
So it's basically unplayable and I have to use a single-screen resolution.
This seems to be what other Eyefinity/TripleHead2Go users get: a very narrow vertical FOV and cut-off menus.
However someone (Dyre Straits) seems to be enjoying a much better game on his Eyefinity setup:
