Speech-to-text still appearing in chat when mic is muted

Weird one for ya. I tried searching forum but the search function is downright frustrating to use ao posting a new thread.

 

Last nigh I (PC) was playing on a shared world with my son (Xbox One S.) My girlfriend and I were in my room and she wanted to talk about Christmas gifts for him. I muted my mic via my headset (SteelSeries Artic 7+ wireless) and the red light came on. We started talking about his presents. Suddenly he knocks on the door to inform me he knows what we are saying because it is appearing in the in-game chat.

 

I test it by taking my headset out to the other room and talking with the mic muted. I know it is muted because I can hear my voice on the TV when it is not. No voice,  but it is converting everything I say to text in the chat. To make sure the mute was working I unmuted the mic and talked and my voice came through on his game. Muted again and again it started putting everything I said into chat. It stopped when I turned my headset all the way off. He does not have a mic himself and it was showing up as coming from my profile in the chat so I know it wasn't from his end.

This may be related to Xbox or not - we don't have any other mutual games to test it on.
