Making cottage cheese enchiladas tonight

 

We've really cut down on how much meat we eat in the past month or so. It's a semi-pescatarian diet with meat no more than a couple of times a month and generally limited to chicken.

That's pretty close to my recipe. I sub pickled jalapenos for fresh ones that I roast and also add some diced onions and use corn tortillas that have been lightly fried. Almost forgot a bit of cheese on the top

 

I use both green and red enchilada sauces but I'm sworn to take those recipes to the grave

Pasta with a mushroom cream sauce.

I used the little round pasta, oricchiette or something like that. A did a mushroom medley heavy on crimini which I cooked with a little garlic and butter. I've been using ghee a lot lately. I put some dried mushrooms in water and used that mushroom water whenever I needed more liquid. After the mushrooms cooked down I added cream and just let it simmer while the pasta cooked.Then salt to taste and add drained pasta to sauce.

Parmesan cheese to top

I made myself a truly decadent toasted sandwich the other day 

 

  • You spread avocado paste on toast
  • Cover with crispy, streaky bacon
  • Use a  good, blue goats milk cheese and cover bacon. Grate the cheese so its easier to spread 
  • Also add some grated mature cheddar : 18 months or older 

Then place under a hot grill until cheese is melted ...simply yummy   :dancing:

I don't know how close Shady is to Blue Mesa Reservoir but it's stocked with Chinook salmon IIRC. He can go get his own damn salmon and drink beer while doing it!

 

I have GOT to go up to the Rockies and go fishing someday.

Did salmon with rice again but added some grilled asparagus this time for color

 

I've never made asparagus before but it was really easy and turned out great

 

I haven't been fishing in forever but maybe it's time to get back in it

I would eat asparagus every day if I could. Sprinkle a little sea salt and pepper on it with a light drizzle of olive oil and it grills up great.

I made some duck fat fries with parmesan, garlic, and black truffle. I didn't eat any but they smelled delicious.

Also grilled some lemon pepper chicken breast as meal prep for my wife

I got this crate of Kelp Broth with Thai seasoning for free awhile ago, and I've been trying to work through it. I wanted to male fusilli pasta, but was tired of tomato based sauces. It came out great, I sprinkled some crumbled feta cheese on it and served it with chicken apple sausages and baked brussel sprouts.

Minestrone is too soupy for me. I cooked down all the broth so it was just a pasta.

Making another Caesar salad. Made croutons this time along with the normal fried capers and grilled romaine. Weakest part is the sauce so next time I might have to make that from scratch too.

Usually I just make myself a quick sandwich from the stuff we stock up on at Walmart and put in the mini fridge on our semi truck in the interest of saving money and time. But, being couped up in that truck nearly 24/7, once in a while you gotta stop, take some time, and eat a good meal to feel human again. Today we stopped at a Petro truck stop in Arkansas and they had an Iron Skillet restaurant there (most of the time it's Subway, Wendys, Arbys, that sort of thing). Looking through the menu I saw the Cubano and immediately knew that's what I wanted. Even an average Cubano is a delicious sandwich, but this Cubano was well above average. The pork chop was amazing, the ham was great, and the cheese, mustard, and pickle ratios were perfect. I had to use willpower to keep from popping wood while eating the sandwich. I got a bowl of beef and cabbage soup for my side which was also quite good.
